I know these are rated at 100gbps speeds, but I need to temporarily connect them to a switch that only has QSFP+ 40gbps ports. Do these DAC cables support 40gbps speeds for connecting into a QSFP+ port? Or are they locked to 100gbps speeds only

Per our check, there is no cable can support 40G and 100G at the same time; Which means if you need the 40G transmission, you need to order the 40G DAC:https://www.fs.com/products/36229.html And 100G transmission, choose 100G DAC：https://www.fs.com/products/50476.html

The DAC will be to go into a Cisco switch and into servers with Mellanox adapters – I’m assuming these will work with no issues?

It will be better to choose dual compatibility. One side is Cisco and the other side is Mellanox compatible.

Can this cable be used in the stack port of Cisco Meraki series device to achieve the switch stacking?

No, it can’t be used in the stack port of your device. FS DAC & AOC can only be used in the business port of the switch to achieve virtual stacking, but can not be used in the stack port to achieve physical stacking. The stacking through the stack port of device belongs to physical stacking which needs a specific stacking cable, and it is under development for now.
